Musophobics may not agree, but the new Spring Weekend Afternoon Tea at Chihuly Lounge is quite a hit, especially with the ladies. Inspired by new Executive Chef Massimo Pasquarelli’s childhood memories of that delicious cheese from cows and sheep feeding on fresh grass in Spring, Executive Pastry Chef Terence Pang deftly whips up a delectable selection of cheese-themed desserts.
A beautiful centerpiece of white orchids seems to beckon to diners as they enter the area, and under its shelter lies Chef Terence’s thirteen cheese-instilled creations, and a selection of fine, imported cheeses and fruits.
Definite highlights include the Parmesan macaroon that pairs intriguingly well with the playfully Swiss cheese-like Blueberry cheese tart—the delicate macaroon accentuates that distinctive blueberry flavour—and the Coffee & soft Guanaja mascarpone cream. Imagine a tiramisu without the ladyfingers, and rounded with a mellow creamy touch.
Other interesting picks from the almost too-pretty-to-eat display include the smokey Goat cheese crème brûlée, tangy and moist Citrus cream cheese rolls, and the Baked apple with feta cheese, almond mousse & lemon jelly that presents an appealing melange of textures.
Cheese also makes a move into their classic scones with the birth of Cheddar raisin scones. The warm, soft scones possess that slight edge that teams beautifully with the dulcet Mascarpone sorbet, as it does highlight the unique Strawberry balsamic salad, served with some very flavourful olive crotons.
Diners who may not be as cheese-inclined can kick back with their assortment of savoury dishes—the Smoked chicken mayonnaise in beetroot focaccia, Glazed Wagyu beef balls and Panko prawn with wasabi mayonnaise did not disappoint—and tea served in their signature, elegant chic ‘Feuille d’or’ line of Bernardaud Porcelain.
The cheese-themed Spring Weekend Afternoon Tea (2.30pm-5pm) is available Saturdays and Sundays from 2 March to 26 May 2013, and priced at $52 per adult (inclusive of freshly brewed and decaffeinated coffee and a selection of teas) and $26 per child (six to twelve years of age).
