If you love Thailand and the flavours it brings, you’re in luck. Marina Mandarin Singapore has specially flown in Guest Chef Aek Charttrakul, and his team from Bangkok’s Suan Dusit International Culinary, for a month-long ‘Flavours of Siam’ promotion at AquaMarine that will have you going “aroy”.
Adding onto their smorgasbord of fresh chilled seafood offerings—no doubt the most popular station amongst diners—Chef Aek presents a delicious array of Thai delights, ranging from bright, adorable Thai desserts to scrumptious street food-style grub.
Start off heavy with the rich Kaeng phed ped yang (red curry with roasted duck), or fresh Alaskan king crabs that surprisingly pair well with Thai appetizers. The Meek rob (sweet and sour fried vermicelli) has a fantastic crunch, and the Kao tang na tang (crisp rice crackers with a savoury chicken dip) makes for great picking at.
Other highlights include the moist, full-flavoured Gai ho bai toey (Pandan chicken)—that is slightly troublesome to take out, but entirely worth the trouble—Tom yum goong (Spicy and sour prawn soup with galangal and lemongrass) and Thai curried soft shell crab.
The selection of Thai desserts come in all shapes, sizes and colours. Aside from the usual, and well-loved, suspect of Khao neow mamuang (sticky rice with mango), the Sung kaya fak-tong (pumpkin with custard) and homely Bua loy puak (taro dumpling with coconut milk)—similar to our local bo bo char char—are worthy of mention.
The Flavours of Siam promotion is available for both lunch and dinner at Aquamarine, and runs through 31 March 2013.
